There can be little doubt that, with its enormous chandeliers, spectacular views, three private dining rooms and open kitchen, Caprice, the new French restaurant in the Four Seasons Hotel, is going all out to put itself on a level with Petrus and Gaddi's - or perhaps Robuchon a Galera in Macau - as Hong Kong's premier Western restaurant.
This is a formidable establishment.
